Although I often prepare a whole meal on the BBQ, I also like to serve all kinds of small bites. Think chicken wings, my grilled cheese sandwich rolls or pork belly burnt ends, for example. You can add these pieces of pineapple in bacon to that list, because they are great for snacking! Perfect for an evening of BBQ tapas or some appetizers with drinks.
- 1 Fresh Pineapple
- 20 slices Smoked Bacon
- 10 tablespoons BBQ Sauce
- BBQ with Lid
- Basting Brush
- Little Skewers
- Fire up the BBQ, going for indirect heat and a temperature of 160 degrees Celsius (320 Fahrenheit).
- Now take the pineapple and cut the skin off. Then cut the pineapple along the heart (that hard part in the middle), so that you have a number of large pieces of pineapple. Cut these into 1 inch cubes. Now wrap a slice of bacon around each part of pineapple.
- Is the BBQ up to temperature? Then place the bacon wrapped pineapple on the BBQ and close the BBQ with the lid. Now cook the pineapple in bacon for 10 minutes. Then take the BBQ sauce and the basting brush and brush the bacon with BBQ sauce. Close the BBQ again and repeat brushing with BBQ sauce again after 5 minutes. Close the BBQ again with the lid and leave the pineapple in bacon for another 5 minutes.
- Has the pineapple been on the BBQ for a total of 20 minutes? Then remove the pineapple cubes and place them on a plate or serving board. Serve the bacon wrapped pineapple pieces with some small skewers, so everyone can just pick a piece, or two. Enjoy your meal!
