Grilled Pineapple with Coconut

A while back, I received "Simple Smart BBQ" by Julius Jaspers, a Dutch BBQ Book. However, a delicious recipe from the book shouldn't be missed, and I quickly knew which one to choose. Julius often has the most enjoyable recipes for desserts and fruit on the BBQ, and this grilled pineapple with coconut was soon on my to-do list! The recipe isn't entirely according to the book because I'm not the biggest fan of the liquor that is originally in the recipe . However, my version is definitely worth trying!

Ingrediënten:

  • 1 Pineapple
  • 400 milliliters Coconut Milk
  • 100 grams Brown Sugar
  • 150 grams Grated Coconut

Instructions

  • Peel the pineapple and then vertically slice it into quarters. Remove the core from each quarter and then slice each pineapple quarter into 4 pieces.
  • Mix the coconut milk with the brown sugar and place it in a bowl. Place the pineapple pieces in the mixture and let it sit for at least 4 hours.
  • After 4 hours, remove the pineapple pieces from the coconut milk and sugar mixture and place them on a rack to dry for about an hour.
  • Meanwhile, fire up the BBQ, aiming for indirect heat and a temperature of about 160 degrees Celsius (320 degrees Fahrenheit).
  • Once the BBQ reaches the desired temperature, place the pineapple pieces on the BBQ and close the lid. Cook the pineapple for 5 minutes, then flip the pieces over. Close the BBQ again and cook the pineapple for another 5 minutes.
  • While the pineapple is grilling, spread the grated coconut on a plate. After the second 5 minutes, remove the pineapple pieces from the BBQ and roll them in the grated coconut.
  • Then, place the pieces back on the BBQ and grill them for a few more minutes on each side. Be careful not to let the coconut burn too much.
  • Remove the pineapple quarters from the BBQ and serve them immediately. Enjoy your meal!
