MOINK Burgers

MOINK Balls have become a true BBQ classic that every BBQ enthusiast must try. The combination of delicious meatballs, smoked bacon, and BBQ sauce always hits the spot. This time, however, I turned these popular balls into a burger variant: the MOINK Burger. Served on a tasty hamburger bun, topped with coleslaw. You've got to taste this!

For the Burgers:

  • 4 Hamburger Buns
  • 500 grams Ground Beef
  • 16 slices Bacon
  • 40 grams Grated Parmesan Cheese
  • 2 teaspoons Garlic Powder
  • 1 Egg
  • 75 millliliters Milk
  • 50 grams Breadcrumbs
  • 2 tablespoons Italian Herbs
  • 1 tablespoon Freshly Ground Black Pepper
  • 1 teaspoon Salt
  • 5 tablespoons BBQ Rub
  • 5 tablespoons BBQ Sauce

For the Coleslaw:

  • 200 grams Fresh Red Cabbage
  • 200 grams Fresh White Cabbage
  • 2 Carrots
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Sour Cream
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Mustard
  • 1 tablespoon Honey
  • 1 teaspoon Mustard Powder
  • 1 tablespoon Dried Parsley

Instructions

  • For these MOINK Burgers, we start by making the coleslaw. It's just a bit tastier when the dressing can soak into the cabbage and carrots for a while.
  • For this, take a small bowl and mix together the mayonnaise, sour cream, apple cider vinegar, mustard, honey, mustard powder, and parsley to make a dressing.
  • Then, thinly slice or grate the red cabbage, white cabbage, and carrots into julienne strips and place them in a large bowl where you can mix the ingredients well.
  • Now, add the dressing to the sliced vegetables and mix everything thoroughly. Place the coleslaw in the refrigerator.
  • After that, it's time to fire up the BBQ. Aim for indirect heat and a temperature of about 120 degrees Celsius (248 degrees Fahrenheit).
  • Next, take a large mixing bowl and add the ground beef. Then add the egg, milk, Parmesan cheese, garlic powder, Italian herbs, pepper, salt, and breadcrumbs. Mix everything well and then shape it into 4 equal-sized burgers.
  • Now, sprinkle half of the BBQ rub over the burgers. Flip the burgers over and sprinkle the remaining rub over them. Make sure the burgers are evenly coated with the rub, then wrap each burger with the bacon slices. Wrap 4 bacon slices around each burger.
  • Once the BBQ is at temperature, add the smoking wood and then place the MOINK burgers on the BBQ grate. Close the BBQ with the lid and cook the burgers for 45 minutes. After this time, brush the burgers all around with BBQ sauce and close the BBQ again. Let the burgers cook for another 15 minutes while the BBQ sauce caramelizes a bit.
  • Now, take your hamburger buns. Slice them open and toast them on the indirect part of the BBQ for a few minutes. If you do this directly over the hot coals, 30 seconds is probably enough.
  • Are the burgers and buns ready? Remove them from the BBQ and get your coleslaw. Take the bottom halves of the buns and top them with a generous scoop of coleslaw. Place a MOINK Burger on top, followed by the top halves of the buns. Serve the MOINK Burgers immediately, along with the remaining coleslaw. Enjoy your meal!
