A long time ago I bought myself a set of beautiful cast iron skillets that I can use on the BBQ. I use them all the time and this time it was for BBQ nachos again. I opted for an appetizer in Mexican style; Pulled Chicken Nachos. With delicious pieces of BBQ chicken, tortilla chips, pickled jalapeños, grated cheddar, and of course, guacamole! So good! It's delightful to enjoy this together while the rest of the food is on the way!

Ingrediënten:
- 200 grams Chicken Thighs
- 1 bag Tortilla Chips
- 100 grams Grated Young Cheese
- 100 grams Grated Cheddar
- 75 grams Pickled Jalapeños
- 1 tablespoon Paprika Powder
- 1 teaspoon Chili Powder
- 1 teaspoon Garlic Powder
- Black Pepper & Salt
- 2 tablespoons BBQ Sauce

Instructions
- Take the chicken thighs and season them with paprika powder, chili powder, garlic powder, and pepper and salt. Let the flavors marinate for a while.
- Meanwhile, fire up the BBQ, opting for indirect grilling at 170 degrees Celsius (338 degrees Fahrenheit).
- Place the chicken thighs on the grill when the BBQ reaches the temperature and cook them until the chicken is done. Then, remove them from the BBQ and let them cool slightly.
- When you can handle the chicken thighs with your hands, it's time to 'pull' them, meaning making strips of chicken. Pull small strips of chicken and place them in a bowl. Mix the BBQ sauce into the pulled chicken.
- Now take your skillet and layer it with tortilla chips, followed by some chicken, jalapeños, and grated cheese and cheddar. Repeat this process several times until you have a beautiful pan full.
- Place your pan or dish on the BBQ and close it with the lid. Now it's just a matter of melting the cheese. This takes about 10 to 15 minutes. Remove the nachos from the BBQ and serve immediately, with guacamole and sour cream, of course. Enjoy your meal!
