S’mores Chocolate Chip Skillet

Occasionally, I also make desserts on the BBQ. Generally, the ideas for those come from my wife. Hence, the reason why the desserts are usually over the top and contain a lot of chocolate. This time, it was a skillet with a dough for chocolate chip cookies, with small pieces of marshmallows as an extra. Planning to make this dessert? Don't go too big with your main course!

Ingrediënten:

  • 150 grams Unsalted Butter
  • 2 Eggs
  • 100 grams Sugar
  • 100 grams Light Brown Sugar
  • 2 teaspoons Vanilla Extract
  • 220 grams Flour
  • 1 teaspoon Baking Soda
  • 0,5 teaspoon Salt
  • 100 grams Marshmallows
  • 100 grams Milk Chocolate
  • 1 tablespoon Sunflower Oil

Instructions

  • Fire up the BBQ and aim for indirect heat with a temperature of about 220 degrees Celsius (428 degrees Fahrenheit).
  • Melt the butter in the microwave and transfer it to a large mixing bowl. Add the eggs, vanilla extract, and sugar, and mix well. Then add the flour, baking soda, and salt, and stir into the mixture.
  • Cut all the marshmallows into small pieces and chop the chocolate into small bits. Mix both into the dough in the mixing bowl.
  • Grease the cast iron skillet or frying pan with the sunflower oil and spread the dough in the pan evenly.
  • Once the BBQ reaches the desired temperature, place the pan on the grill grate and close the BBQ lid. Bake the s'mores chocolate chip skillet for about 25 minutes.
  • Then remove the pan from the BBQ and let it sit for 5 to 10 minutes. Due to the marshmallows, your dessert will be piping hot, so even after 10 minutes, everything will still be warm.
  • Optionally serve the s'mores chocolate chip skillet with vanilla ice cream and whipped cream. Scoop directly from the pan using a serving spoon. Enjoy your meal!
